Temperature drift is one of the most common calls we take from Portland kitchens, and it usually comes down to a few ordinary parts wearing out. Here's how to think it through before you call anyone.

What "running hot or cold" actually means

Every oven cycles. It heats past your set point, shuts off, coasts down, then heats again. A healthy oven swings maybe 15 to 25 degrees either side of the number on the dial. That's normal, and it's why your first batch of cookies never matches the second. Drift is different. Drift means the average sits wrong, all the time, in one direction. Bread that always needs an extra fifteen minutes. Casseroles that always scorch at the edges. If you can predict which way it's off, that's a pattern, and patterns point at a part. Random, inconsistent results usually point somewhere else entirely.

Cause one: the oven simply needs calibrating

Start cheap. Most ovens built in the last twenty years let you offset the temperature yourself, usually by holding the bake button and using the arrow keys. Your manual will spell it out. If your oven reads a steady 25 degrees low, an offset fixes it in about a minute with no parts and no visit. This drifts over years as the sensor ages slightly. Before you adjust anything, though, confirm the oven really is off using a standalone oven thermometer, not your gut. Racks in the wrong slot and a heavy dark pan can fake a calibration problem convincingly.

Cause two: worn door seal, bad hinges, or a tired sensor

Heat leaks. Run your hand a few inches from the closed door edge while the oven's hot and feel for a warm stream escaping. A gasket that's torn, flattened, or missing a chunk lets enough heat out that the oven runs cool and cycles constantly. Sagging hinges do the same thing by holding the door slightly open at one corner. Inside, the temperature sensor is that thin metal probe poking through the back wall. If it's bent so it touches the liner, it reads the wall instead of the air. Sensors also fail electrically and drift as they age.

Cause three: the heating element or control board

Look at your bake element when it's on, if it's exposed. It should glow evenly, orange, end to end. Dark spots, blisters, or a section that never lights mean it's failing and can't hold the set temperature. In a lot of ovens the bake element sits under a floor panel, so you may not see it at all. Above that, the control board or relay decides when to send power. When a relay sticks or gets weak, the oven overshoots badly or never quite arrives. Broil works fine but bake runs cold is a classic hint here.

Safe checks, and what we do that you can't

Safe for you: put an oven thermometer on the center rack, preheat, wait twenty minutes past the beep, and read it. Repeat at a second temperature. Inspect the door gasket. Check that nothing's blocking the vent. Make sure racks aren't crowded with foil. Stop there. Don't pull the back panel, don't touch gas connections, don't test elements yourself. When we come out, we measure sensor resistance against its spec chart at known temperatures, log the actual cycle behavior over a full preheat, and check the relay under load. How far off is too far off?

A steady 25-degree error you can usually correct with the oven's own calibration setting. Anything past 50 degrees, or an oven that swings wildly batch to batch, means a part is failing and needs measuring.

Can I trust the cheap oven thermometer from the grocery store?

Reasonably, yes, for spotting a big error. Hang it on the center rack, away from walls, and let the oven sit twenty minutes after preheat. Take two readings on different days before deciding.

Why does the oven bake unevenly front to back?

That's a different problem than drift. Usually it's a blocked vent, an overcrowded rack, or a convection fan that's stopped turning. Try baking one pan at a time in the center position first.
